S’more Rice Cereal Treats

One of my goals this year is to bake more. I love baking, and so do my girls. However, since it’s not exactly healthy (or at least the stuff I want to make is not), I’m only going to do it once a week, eat it, and throw the rest out. Very wasteful, I know, but this way it’s a special day, and we’re only eating sweets once a week (a far cry from what we were doing just last month!).

Last week we made Tres Leches cake, which I haven’t had in years and was absolutely fabulous, though we ate it faster than I could snap a picture. This week we decided on s’more rice cereal treats, which was far easier and something the girls could help out with a little more.

We made these after a fun snow day and with a nice fire and a little hot chocolate, they were perfect! I mean it’s cereal, chocolate, marshmallows, graham crackers, and butter….what’s not to love??

We started out by crushing up a package of graham crackers. This was great for the girls to get their hands dirty without literally getting their hands dirty. Ain’t nobody want that.

While they’re doing that, I chopped up 2 chocolate bars. Now the key to the recipe is to be sure to taste test the chocolate before adding it in. That’s an absolute necessity!

Next, over medium heat, I melted 4 tablespoons of butter and then added in 6 cups of marshmallows. I had multiple bags already opened, so I used both big marshmallows and small for making the treats and toasting the marshmallows on top.

Be sure to keep an eye on that! I love a nice toasted marshmallow, but I’d rather not have to scrub it out of my pot for the next week, thank you!

While that’s melting, add all the dry ingredients in a bowl and have the kids stir it up, making sure to taste test as they go. Hey, we gotta make sure this comes out right!

After the marshmallows are melted, I poured them over the dry mix and mixed thoroughly before pouring it all into an oiled casserole dish.

After that I popped it into the oven to broil. Keep an eye on it! It only takes a couple minutes to toast those marshmallows. Anymore time than that and you might end up with campfire in your oven!

  1. In a large bowl, combine rice cereal, chopped chocolate, 1 cup mini marshmallows (or larger marshmallows, chopped), and crushed graham crackers. Stir. Set aside.
  2. Oil casserole dish or baking pan. Over medium heat, melt butter. Add 6 cups marshmallows and stir periodically until melted.
  3. Pour over dry ingredients and stir. Pour into prepared dish and even out with oiled hands or oiled spoon.
  4. Place remaining marshmallows on top evenly, and broil for about 2 minutes, or until slightly toasted, watching the whole time as to not burn. Remove from oven, cut, and enjoy!

Preschool Week 1: Apple Week (and apple leather recipe)

So we kicked off our preschool curriculum this past week (you know, again…don’t judge) learning all about apples. The week before, we decided to go ahead and drive to the closest apple orchard, which was almost 2 hours from my home. But it was well worth it!

This place was at the top of a mountain in Charlottesville and was breathtakingly beautiful!! We ate peach ice cream, donuts, and apples for lunch. Don’t judge…I’m never prepared for these things. Oh and the peach cider was quite possibly the most delicious thing I’ve ever tasted. Ever.IMG_0048IMG_0054IMG_0055IMG_0060

We picked $13 worth of apples. Not sure how many pounds that was, but it was quite the challenge to keep the toddler from eating all the rotten ones off the ground. For her it was a smorgasbord!

They had a lookout area where I could experiment with my new phone on how to do a panoramic. Doesn’t do the view justice at all, but I tried!

I had so much fun learning about apples with my little preschooler! Of course a few days into it I realized I missed an important milestone that every other mother was reminding me of on Facebook. Mom fail.

IMG_0123Our “preschool” days are really only 30 minutes to an hour. And it’s incredible how long it takes me to plan for that 30 minutes to an hour! We practiced writing the letter A, learning about the lifecycle of an apple and the different parts of an apple, making apple leather and apple chips, learning about oxygenation, and did apple crafts all week. Everyday we started with some exercise and a song. It was so much fun!

Instructions
  1. Preheat oven to 400 degrees, then turn down to 180 degrees. If you have a gas oven that doesn't go down that low, preheat to 400, then turn off and just keep the pilot light on. This is how I made mine, and I had to keep it in the oven overnight.
  2. Lightly spray baking sheet with oil spray.
  3. Spread applesauce over baking sheet, just enough to barely cover the sheet (about 1/8th inch).
  4. Place in oven for at least 3 hours to overnight, or until you can peel off the applesauce.
  5. Peel off applesauce into a roll, cut, and enjoy!

Not Your Normal Nacho Night! A fun twist on a typical nacho or taco night!I’m constantly looking for a meal plan that is easy, cheap, and healthy. I had a friend a while ago who was telling me about her nacho night. Once a week she sets up a nacho bar for the whole family. It’s cheap, easy, and there isn’t much cooking or cleanup involved. I loved the idea! I was talking it over with the Hubs, and of course he has to put a spin on it. This is Nacho Night our way!

The Ingredients: 1 Package Store-Bought Tostadas, 1 lb Ground Chicken (or Beef), (1) 8oz Container Sour Cream, (1) 16oz Can Refried Beans, 2 Cups Shredded Mexican Cheese Blend, 1 Package Store-Bought Taco Seasoning, 3 Tomatoes, 1 Lime, 1 Mango, 1/2 Avocado, 1/2 Head Iceberg Lettuce, Jalapenos (optional).

Step 1: Preheat oven to 400 degrees. In a saute pan, brown the chicken until cooked, then add 1/2 Cup water and taco seasoning packet. Stir until combined. While the meat is browning, you can prep the rest of your ingredients: Dice the tomatoes, slice the avocado into thin strips, shred the lettuce as thin as possible, and cut your mango into 1/4″ thick rounds.

Step 2: In a small sauce pan, heat the Refried Beans with 1 Cup water and stir until combined and warm.

Step 3: While the beans are warming, place the mango on a hot grill. Sear on the grill until you have light grill marks on each side. This should only take about 2-3 minutes per side. Remove from grill and slice into 1/2″ strips.

Step 4: On the Tostada, layer the beans, meat and top with cheese.  Place on a cookie sheet and bake in a preheated 400 degree oven for 10 minutes until the cheese is melted.

Step 5: Time to assemble! Layer on your Lettuce, Tomato, Avocado and Mango. Add a nice dollop of Sour Cream and a squeeze of fresh Lime. Serve and Enjoy! (This recipe will make 6 Tostadas)

The thing I love most about this recipe is that each bite is full of flavor! You don’t have those straggler chips that always end up on the bottom or at the sides with little to no topping.Every bit  of the tostada is loaded with toppings so it’s like you’re eating the best of the nachos with each bite! And it’s wonderful for kids too! LV had so much fun assembling her “pizza” (playing pizza has become her new favorite activity), which of course made it so much easier to get her to actually eat her dinner!

Chicken Parm Night!
In the deep south where I was raised, Sundays were always something special. You’d wake up, go to church, and then “fellowship” afterwards…which was southern slang for a family reunion with lots and lots of food. I have delightful memories of those Sundays, and I always knew I wanted to replicate them with my own family one day. It was a few years after we were married that The Hubs told me he wanted to start doing an Italian Night once a week because, well, he loves Italian food. And thus, our own Family Italian Night began, years before the rest of our family was born.
